SWITCH UP YOUR MEAL OPTIONS FOR THE FESTIVE SEASON; HOW TO MAKE GARDEN EGG STEW

Your meal choices for the festive season should not be limited. Diversify your meal options and treat your guests to finger-licking Ghanaian dishes this festive season. It may surprise you to know that some of these dishes are not expensive and are easy to prepare.

 

If you are not sure of what to decide on, you could consider preparing garden eggs stew with yam or plantain.

 

Ingredients

Garden eggs

Palm Oil

Pepper

Chopped tomatoes (optional)

Chopped onions

Salted tilapia (optional)

Salmon (any other fish is okay)

 

Directions

 

To prepare the garden egg stew, first cut the garden eggs in two to check for fruit worms and other insects. After carefully checking to make sure there are no fruit worms, wash the garden eggs in a bowl of water.

 

Put the garden eggs and pepper in a saucepan filled with water and boil for a few minutes. Whilst that is on fire, proceed to peel the yam or plantain and then cut it into small sizes. Put it in a saucepan filled with water and put it on boil. Add a little salt to taste.

 

When the garden eggs and pepper are soft enough, drain the water and grab your clean earthenware bowl to begin the grinding process. Start by grinding the pepper and onion, and then add the garden eggs. At this stage, add the fresh tomatoes (optional) and continue to grind the mixture until it becomes a paste.

 

Place the oil on medium/low heat for a minute or two. Add the chopped onions to the heated oil and stir for a few seconds. Add the salted tilapia and then the salmon (or the fish of your choice) and lightly fry it for a minute.

 

Add the garden egg mixture to the heated oil and cook for a few minutes. It is important to taste before adding salt or seasoning; only add seasoning and salt only if the salt content is low. Take it off the heat and transfer into a serving bowl.

 

Remove the yam/plantain from the stove with a clean napkin and drain the water from the saucepan.

 

Serve with the sauce and avocado or fried egg.
